Universal Pineapple Upside Down Cupcakes

I know - Pineapple Upside Down Cupcakes?!?!?!? I had not heard of them either!!! It is a pretty funny story how they came about........

I was talking to my boyfriend (Aidan) one evening and how I would make cupcakes for his boss to bribe her for early shifts for him when I am in town. He told Amber that I would make cupcakes for her if she scheduled him on the early shifts and she was like OK!!! So, he asked her what flavor she wanted. I assumed that she would pick Chocolate, Vanilla, Red Velvet - you know a "cupcake" flavor. He calls me one evening and told me that she said she wanted Pineapple Upside Down cupcakes. I said, "excuse me - what!?!?" He then tells me that she said "I have never seen anyone make them" - I am thinking me either!!!

So, then it became a challenge and I researched it and this weekend I did a test run before I go to LA to bake them! This is the creation I came up with.......... outcome - SWEET SUCCESS!!! Everyone that tried them loved them!! So, thank you Amber for the sweet inspiration for a new cupcake flavor and the early shifts for my sweetie!!! If you read this I wouldn't be opposed to you throwing in an extra day off either...(preferably Sunday the 21st)

Ok, so yes I did get this recipe out of one of my "cupcake" cookbooks but......

they are soooooooooo good!!!

I made these for my sweet BFF that came to help me with the Festival.

I wanted to make something that wasn't a cookie since she would be looking at them

ALL DAY!!

I also wanted to make something she could share with her family

because that is how she rolls

In honor of the release of New Moon I am posting a

tasty treat that you can make for your New Moon parties....

I know you are having them!!

While I was visiting my cousin she told me about these cookies

that she had made for a Twligiht watching party....

when she said "red velvet" I jumped from my chair

ran out the door and down the street to the store while

searching for the recipe on my iphone.........

Ok, it didn't happen quite like that but the very next day we stopped at

the store and made them after dinner.

I LOVE them but I love all things red velvet......

If you are not a Twilight, New Moon, Eclipse or Breaking Dawn fan

what is WRONG with you?!?!?

I kid I kid I kid.......

You can call them Red Velvet White Chocoloate Chip Cookies

instead of Vampire Cookies.....

but you MUST make them!!

"Vampire Cookies"by Janice my cuzzzzzzzzz...

(18.25 ounce) box red velvet cake mix
¼ cup oil
½ cup mayonnaise
2 eggs or egg substitute
2 cups old fashioned oatmeal
1 cup white chocolate chips (um or the whole bag)

Preheat oven to 350 degrees.In a large bowl, combine the oil, mayonnaise and eggs.Mix well.Stir in the cake mix and oatmeal.Add the white chocolate chips.Roll the dough into 1 – 1 1/2″ balls.Drop onto ungreased cookie sheets.

Bake for 8 – 10 minutes, don’t overcook.

Cool on cookie sheet one minute.

EAT THEM ALL!!!!!!

Jungle Cookies

I am really proud of these cookies for a couple of reasons!!!

I looked online for a monkey face cookie cutter and did not find one that I really liked.
I ended up reshaping a flower cookie cutter I had and made my own monkey face.

The lion was made using a flower cookie cutter.

I also could not find a elephant face cookie cutter.

So, I printed out a face that I found in clipart and enlarged it.

I hand cut the elephant faces!!!

I am really pleased with how they turned out!!

This order is for a little guy's birthday party!!

I hear they are planning on having a WILD time!!!

Snow, Hats and Mittens

Yesterday was the perfect day to decorate winter hats and mitten cookies!

This year has been a record winter for Texas in many ways!!

We received a good amount of snow yesterday.
It was beautiful I felt like I was in a snow globe.

Texas is known for shutting down when Winter weather blows through.

The schools released at 2pm and started late this moring.

One reason I love Texas ~It was snowing yesterday and the sun is shining

today and it will most likely

reach 60 degrees!

Popcorn - Take Two!!!

So, I did an earlier post on Popcorn and how BIG they were.

I was making cookies the other night and cut out a smaller version of the popcorn bites.

I think these are ALOT better and actually are the actual size of popcorn!

I think I will stick with this cutter from now on for these bite size cuties!!

Why do I post about all things

I was reading Decorated Cookies post about popcorn cookies!

I thought what a great idea! I can get popcorn bags make cookies and put them inside the bags!!!

So, last night I baked up some popcorn cookies and decorated them.

Decorated Cookie used a 1 1/4 inch round cookie cutter.

The smallest I had was 2in so my Popcorn is TEXAS SIZED!!!

Next time I will use a smaller cookie cutter so they don't look like

Texas Size Popcorn/Chicken Feet, HA!!!

I wrapped these up in the bags and Makenzie is giving them to her Teacher's for Valentine's Day!!

I got an order from a friend for Dinosaur cookie favors for her son's birthday party!

When I got the cookie cutter it was smaller than I had imagined!
After baking them up I didn't think it was enough cookie for a favor.

So, I baked two cookie bites for each treat bag!

I think it worked out great and I'm glad I added the extra cookies!

I have mentioned my black cocoa sugar cookie in a previous post!!!

I found black cocoa at my local bake store and baked up a batch.

They taste just like Oreo's.

This weekend I had to make a batch for a Valentine order.

I had some left over so thought I would make some

black cocoa cookie bites!

I went a little bit further.... I did!!!

I took vanilla icing and piped it in the middle of two black cocoa cookie bites!!!

I got an order a couple of weeks ago for a "pirate" party package for Captain Garren's birthday party! I was so excited. I have been wanting to decorate pirate cookies ever since I first saw them.
I had alot of fun doing them and I think they turned out pretty cute!

My cousin requested Scrapbook cookies for a birthday party she is
having for her sister (my other cousin).

At first I was stumped and asked a few of my cookie friends for some ideas. I ended up looking online at scrapbook embellishments/stickers. I cam across the cutest stickers that were odd shaped and just had one word. I sent them to my cousin for approval and she loved them.

So, scrapbook cookies were born!!

On Sunday I went to Waco to visit my parents, eat

The colors I used are dark pink, light pink, brown and yellow.

PW's Perfect Pound Cake

I have had so many cookie post lately I thought you might enjoy seeing something other than decorated sugar cookies. Although, I did spend most of the weekend baking sugar cookies. I think I made around 300 cookies on Saturday. I did carve out a little time on Sunday between the 100 loads of laundry to get this cake made. I put it in my "to bake" folder last week and it has been calling my name ever since. I saw the recipe on PW's website. I love pound cake and this cake is so flavorful and moist you don't even need a glaze. Now, if you have some strawberries and whip cream that my friend is a different story!!!

Printable Recipe

The Perfect Pound Cake

3 sticks Butter
3 cups Sugar
5 whole Eggs
1 teaspoon Butter Flavoring
2 teaspoons Lemon Flavoring (I used Princess Cookie & Cake Bakery Emulsion)
3 cups All-purpose Flour
1 cup Sprite, 7-UP, Or Sierra Mist

Preparation Instructions

Preheat oven to 325 degrees.

Cream butter. Add sugar, 1 cup at a time, mixing after each addition. Add eggs, 1 at a time, mixing after each addition. Add butter and lemon extracts and mix well. Add flour, 1 cup at a time, mixing well after each addition. Add soft drink, then mix together until combined. Scrape sides of bowl, then mix briefly.

Pour into a greased Bundt pan and bake for 1 hour to 1 hour 10 minutes, until the cake is no longer jiggly.

Remove cake from oven and invert pan until cake drops out. Slice

The Bachelor.......

Sooooooooooooo, the new season of The Bachelor has kicked off!!!

Every Monday I get together with few girlfriends and we watch the show together (don't judge me), HA!!

Really, it is an excuse to get out of the house and enjoy some goodies and have some girl time!!!

Also, watching someone else's drama helps us forget about the drama in our own lives.

Tomorrow is Bachelor night at my house so I just had to make some sugar cookies!!!

Christmas Cookies Round 2

So, this is my second set of Christmas Sugar Cookies. Word is getting around and request for sugar cookies are coming in!!! I knew there would be TONS of other goodies so I made a small batch (dozen cookies) for Christmas at Nana's. I am glad, I was right, there were TONS of goodies ~ *wink*

Chocolate Chip Butter Bites

Chocolate Chip Butter Bites

(have a glass of milk handy this recipe has THREE sticks of butter)

Chocolate Chip Butter Bites

1 ½ cups softenened butter
¾ cup powdered sugar
1 tablespoon vanilla
3 cups flour
½ teaspoon salt
2 cups (12 oz bag) semisweet mini morsel chocolate chips

More powdered sugar

Preheat oven to 375. Beat butter, ¾ cup powdered sugar, vanilla, and salt in bowl. Gradually beat in flour. Stir in morsels. Shape dough into 1 inch balls. Place on ungreades cookie sheets.

Bake for 10–12 minutes until set and light brown. Remove from oven, leave on sheet until set and cooled. Roll in powdered sugar and cool completely.

Saltine Toffee Bars

Well........... I have seen them here and here and a few weekends ago at a Christmas get together I walked in the kitchen and saw them sitting on the dessert table!! So during the gift exchange I had a plate of them!!! Oh, they are so addicting and so delicious. They are perfect to make for a get together!!! The recipes I have seen vary. I emailed Aunt Holly to get her recipe since she is responsible for my newest addiction!!!

Saltine Toffee Bars

2 sticks butter
1 1/2 cup brown sugar
Saltine Crackers
Chopped Nuts (optional)
Hershey Semi-Sweet Chocolate Chips

Bake at 350.

Line baking sheet with foil or grease with butter/spray

Line crackers in baking sheet. Melt butter and brown sugar over medium-heat bring to boil. Pour mixture over saltine crackers and bake at 350 for 4 minutes. Remove from oven and drop chocolate chips on top of crackers. Spread the melted chips over crackers. Sprinkle nuts on top. Refrigerate until firm. Remove from refrigerator and break apart!

ENJOY!!!

Birthday Cake

What is better thank cake for your birthday?!?!? TWO cakes for your birthday!!!!

This year I had a GREAT birthday made special by so many people!!! This year I had TWO birthday cakes!!! If you have not caught on yet, I love CAKE!!!! My Mom bought Michael (his birthday is the day after mine) and I a birthday cake and it was red velvet, yummy!!! We enjoyed it on Saturday when we celebrated Christmas together. She knows I love all things personalized or monagrammed so this cake was perfect!!

Me and my bestie had a pack this year that I would get her a birthday cake and she would get me one! We both have ordered so many cakes from Patsy's Bake Shop in West for friends and family that we wanted to make sure we got a Patsy cake for our birthday. It turned out sooooo cute! She loves my love for Paula Deen, Pioneer Woman and baking so she went with that.

Christmas Cookies

I took off work this past Friday to get alot of things done before we headed to Waco for a weekend full of fun! One of the things on my to do list was to get my cookies decorated!!! I love making and decorating cookies but it so much work to get the icing made, colored and bagged but once you do it is a alot of fun!!! This was my first set of Christmas cookies and I think they turned out really cute and the cookie was so soft and yummy! I personalized two of the Santa hats for my parents!!!

I used the Wilton decorating gel in the tube and it worked great to write the names but the only problem with that is that it does not dry. It gets tacky but does not dry where you can put it in a bag. Do you have any writing tips? I don't like to use Royal Icing because my writing never turns out very good? What do you use?

Has anyone ever used the Wilton piping gel for names? Is there anything you can put over it to make it hard where you can put it in a cute bag and tie a ribbon?

Pecan Pie Cookies

We had Christmas this past weekend at my Mom's house and I thought these little Pecan cookies would be great to take. My Dad loves all things pecan so I knew I couldn't go wrong. He said they were great! They are super easy to make.

Pecan Pie Cookies

Cookie Ingredients:

1 cup brown sugar
3/4 cup butter, softened
1 egg
1 tsp vanilla
2 cups flour
1 tsp baking powder

Filling Ingredients:

1 cup chopped pecans
1/2 cup brown sugar
1/4 cup whipping cream
1 tsp vanilla

Heat oven 350. Combine all cookie ingredients except flour and baking powder in large bowl. Beat at medium speed until creamy. Reduce speed to low; add flour and baking powder. Beat until well mixed.

Shape dough into 1 1/4 inch balls. Place 2 inches apart onto ungreased cookie sheets. Make indentation in each cookie with thumb; rotate thumb to hollow out slightly.

Combinge all filling ingredients in small bowl; fill each cookie with 1 rounded teaspoon filling. Bake for 8 to 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets.

So, tomorrow is my birthday but I got an early birthday present from my honey last night. He has never been good at holding onto presents the supense kills him and he just has to give it to me or ~~maybe I asked if I could have my present early~~. No matter, I got it and I LOVE it. I told him I would love to have anything from the Paula Deen kitchen collection but did not mention one certain product.

AHHHH, I love them! I love the Aqua color! I love,love,love them!!! I cannot wait to cook with them!

This weekend we had a Kid's Christmas Party at our house and had a great turn out!!! So, the sweet treat was CUPCAKES!!! I love cupcakes they make me smile!! There is no special recipe for these cute little cakes. They were simple cup cakes,box mix + icing = yummy treat!! I bought the cutest christmas tree cupcake stand at Michael's on clearance for $3.99.

I had to redeem myself from my recent CAKE WRECK! These cupcake cuties made me feel much better!
